Egg Breakfast

Having a loaf of Ciabatta helps. Especially when you are in need for easy breakfast in the morning when your time is limited. I grilled my homemade Ciabatta and topped them up with a sunny side up egg that simply seasoned with salt, pepper, red pepper flakes and sliced green onion. To make it healthier, i put some greens on the side. Simple.

Poached Egg Breakfast


Breakfast does not have to be difficult and outrageous. When I am in town, I rather have breakfast at home, if I could help it. This one was pan grilled homemade Ciabatta with mashed avocado with salt and pepper and a bit of lemon juice, topped with a poached egg. On the side was simple salad, so that I would not feel guilty the whole day. Healthy and filling.

Homemade Ciabatta


Ciabatta is one of my favorite things to make and to eat. It's a pity that we barely have enough people to eat them at home, but I will continue making whenever I feel like making them.

Salad & Salmon Lunch


I had this salad for lunch a couple of days ago. The grilled bread was leftover from my homemade ciabatta. The salmon was pan-seared and the cheese was Apetina. The dressing was just EVOO with salt and pepper. Simple and healthy.

I baked two loaves of Ciabatta again yesterday. I don't know if I am going to keep on with this but so far I enjoy both making and eating them. And yes, this is the 1570th post! Whoa.

Ciabatta & Bread Sticks


I find weekends to be the perfect time to bake Ciabatta.  I could prepare the starter the night before and wake up the next morning and start working on the dough. By the time the rest of the family members are awake, the bread will be ready.  I am an early riser anyway, that includes weekends too. I try not to start running my mixer too early as I do not want to hear any complaints from the neighbors. This recipe from The Kitchn is one of my favorites.

Found!


I finally found a recipe for making Ciabatta that works. These are the the results from my second time making them after the first attempt which was a success too. It is crispy on the outside, moist inside with lots of beautiful holes. It tastes so good! Use them for sandwich, slice them and dip them in olive oil, spread the butter on them.... whichever way you choose. Just good!

I Think It Get Closer...



I do want to be able to make Ciabatta the way the store across the street from where we used to live sells. My ciabatta never looked close to it. Out of boredom as I surfed the net last night. I came across a video on Ciabatta making. Which led me to another video. And more videos. Many different recipes, many different ways. I kind of got an idea of that I wanted to try the next morning. My attempt today was quite satisfactory. It's not quite there yet, but I am still pleased with the appearance of it. The crust is crisp, the texture is chewy, the bread must be Ciabatta. Now . Happy day!

Saving $

Something is not right with my nose, since I was much younger. My GP never really encourages me to go to see any specialist although I feel that I need to. When I complain about it, he will prescribe me with some allergy medicines and spray Nasonex. I know that I should go and see an ear nose and throat specialist, but I never prioritize it. I need someone to talk me to it, to push me into doing it, to come to me a name and number or even better with an appointment that has been set..... Without that, I keep on telling myself, later...., later.....

Things are looking up in the stock markets in Asia and Europe today after world leaders promised more government backing for the sick financial system. I was hoping Jakarta market to surge more, but it barely gained ground. In fact at the beginning of the hours, it went red. Keep my fingers cross here. We still need to live cautiously, everything is so pricey these days!

Our fridge acted up a bit, but after phoning the Maytag technician and was given free advice on trying to fix it myself, I am hoping hard that it will work well again. We'll see in two days or so whether I need to get him to come. At least it's free of charge so far. How nice of him to do that. I will thank him again if his advice really works. I will have to call him again, if it doesn't work also.



Here it is, saving a couple of dollars from making our own ciabatta at home. Freshly baked, cheap and delish!

Attempt On Ciabatta Making




I has come across my mind many times to try making ciabatta, another favorite Italian bread in the family. We mostly buy a delicious one or two from a bakery right across the street almost on daily basis. But, finally, the day has come!!!!!

I started the sponge yesterday, confidently planned to make it this morning upon sending off the kids to school. The recipe indicates that I need to use a mixer fitted with the dough hook and it only hit me this morning that I had no idea where my dough hook was. I bought my new Kenwood early in December before we went to New Zealand. During these five to six weeks, this dough hook has been securely placed somewhere. Somewhere safe indeed!! After searching the whole kitchen all morning without any results, I decided that the show must go on, with or without the dough hook.

Let my mighty hand be the replacement of the mixer. The result? Just look at them yourselves! Not too shabby.........
