I was craving for some pandan cakes and as usual, I tried to make as little as possible. However, it was still a bit much, there were 12 of them using three eggs. I converted the measurement from cup to grams and somewhere along during conversion, I must have done something wrong. I ended up with having a bit more flour than needed, I had a little denser than usual cupcakes, the cakes did not collapse too much from their peak, but still taste really good.

Goodies In Harrods...
Harrods is one of the few favorites places for us to go to when we are in London. There are many interesting stuff to look at and buy there, some of which are over-priced but the selection is wonderful. The food hall is simply the best and it is my favorite. Just looking!! Everything looks so attractive and inviting. There is so much more in the store though and these pictures do not do justice to the real things there.

Make It And Eat It!
It's no longer that much fun decorating the cupcakes the day after they were made and when there was not any special event for them. I used the sprinkles that I got from Sur La Table in Westfield, San Francisco. I simply squeezed out the cream cheese frosting that I made the day before, topped it with some dino-shape sprinkles, took some pictures and ... ate it! Done.

Cupcakes!
We are sometimes too easily affected by what we watch on TV. Miss K watches DC Cupcakes and I am guilty of dropping by and sitting across to watch a bit here and there. Soon after, especially Miss K, want to have some cupcakes. This led me into making these cupcakes this afternoon. The cream cheese frosting was made too and we decorated some. In fact, we ate some. We just have not taken picture of them yet. Maybe tomorrow, because we still have the cupcakes and the icing.

Colorful ....
I had a friend over with her little 5-year old daughter yesterday so I thought some chocolate cupcakes decorated with colorful sprinkles would be just great for both her and her mother. Besides, my two children love them too. We had not had them for a while. To make it simpler, I used Betty Crockers' Devil Cake Mix. I still had many boxes bought over the summer in the USA. It's about time to start using them, summer is coming in no time.....

Cupcakes For Two ...
Pfffs... and it's February. The kids are back at school and in these first few days, I have tons of catching up to do. I enjoy being able to work with little interruption, that's how to get the job done anyway. It is always nice to finally have the routines back and I will have many of these in the forthcoming weeks.
I have been up since before six this morning and got quite a bit of things done. While dinner is in the oven, beef stroganoff it is, and everything is well under control, I could use a little surfing time alone.

The cupcakes above were made and delivered last week for DH's two little nieces living on the other side of the country. They are basic pound cake with cream cheese frosting. I hope they enjoyed them.

Simply Cupcakes!

Sometimes simple is better. We, No.3 and I, made these simple cupcakes this afternoon, just butter, sugar, flour, eggs and vanilla. I don't think it took us more than 10 minutes to have them ready for the oven. Another 10 minutes in the oven, they are ready. Scrumptious, even without frosting. Perfect for Sunday afternoon tea.
