Lemon Madeleines

It was the day after we got back from our holiday in Phuket. I missed baking so much and had been thinking about baking some madeleines, as few as possible, because there were only two of us at home. I came across a recipe from Chuck Williams that uses only one egg and yields 12 madeleines. His method is different than the one I normally use. I made some adaptation and made them as lemon madeleines.

Recipe below:

Adapted from Chuck Williams (William Sonoma)

Ingredients:

1 egg
1/4 c sugar
1 Tbs lemon zest
1 Tbs lemon juice

1/2 cup flour
1/2 tsp baking powder
a pinch of salt

4 Tbs soft butter
Powdered sugar

Directions:

Preheat the oven to 165C
Butter and flour 12 madeleine molds, Set aside.

Sift flour, baking powder and salt.
Beat the egg, sugar, lemon zest and lemon juice on medium speed for about 30 seconds, then increase the speed to high and beat the mixture until becomes very thick, for approximately 8-10 minutes.
Fold the sifted flour in gently.
Add the soft butter into the above and mix well.

Spoon the batter into the molds and bake 10-12 minutes, until they are golden brown.

Invert onto rack and dust with some powdered sugar. Best eaten on the day they are baked.

Adding Colors...

Over the past two months, I have been adding more silicone molds to my collections.  I do not really need them, it's a matter of wanting them much more than needing them. How could I resist the above from a local store here, called Lemon Zest. They were so adorable and they were on very good discount.

My excuse for getting more Madeleine molds? Well, they are slightly have different shapes than the ones I already have and they are bright red! I did not have any red ones yet! These molds were purchased from Amazon. So was the one below. I liked the shapes of these Mini Bundt molds, They are pretty! And I am weak. So what?

Madeleines

I wanted to bake madeleines for my niece and nephew that were coming and my sister in law whom my mother in law was visiting yesterday, but with my niece only giving me a 5-minute notice, even the superwoman could not make it happen. In ended up serving pandan sponge cupcakes from Friday night that were still good to eat. (They are alive!)

I love the extra space that I have now in the kitchen and the bright natural light that comes through the window. On daily basis, the dust is also flown in as there so many constructions are being done in the area. Some are near and some are quite far but still visible from our place.

Madeleines are simple and straightforward to make. In a very short time they are ready to eat and to go. Our family likes them too and they could eat quite a bit. A box to go was for sister in law.

Chocolate Dipping Madeleines

They are just same old madeleines, except I dipped them into warm chocolate gnache left by big miss baker who baked some chocolate cupcakes last week and still had some gnache left. They are yummy. I kept on dipping for more and licking the mess on my fingers.

I was under the weather yesterday, mainly contributed by lack of sleep for many days and a couple of weeks or so. I had a nap after the kids left for school because my head hurt so much and again after lunch, because I felt so week and tired after doing some works. I made those madeleines in between my napping time, maybe baking madeleines was just a dream? I am getting old.....er.
