Lunch At Canton Paradise

One fine day sometime ago, a bunch of us had dim sum lunch at Canton Paradise in Marina Bay Shoppe. The food were all good and we were very pleased with what we ordered.

Healthy Carrot Cupcakes (With Recipe)

These healthy babies are good for breakfast, snacks or dessert. Or call it whatever at anytime you want to munch something. 


It seems many people baked carrot cakes over this past weekend, I was one of them. In an effort to be healthier, I made healthy carrot cupcakes. These are very moist because of the incorporation of banana to sweeten the cupcakes as well as coconut oil and the grated carrot. They are also creamy because I used oatmeal and almond flour. 

I also mixed in dried cranberries to enrich the flavor and walnut for the crunch.  The recipe is below.



Recipe

Ingredients:
1 egg
1/4 c coconut sugar
1/3 banana, mashed
1 cup grated carrots
1/4 c almond flour
1/2 c instant oatmeal
1/4 tsp salt
1 tsp baking powder
1/8 c coconut oil
1/4 dried cranberries (more or less, your preference)
1/4 c walnut and more for topping (more or less, your preference)

Directions:
Preheat oven to 350F and line 6 cup muffin pan with liners.
In a medium bowl, whisk together the egg and coconut sugar. Add mashed banana and continue whisking. 
Add grated carrots and mix well using a spatula.
Put the dry ingredients,i.e. almond flour, instant oatmeal, salt and baking powder in a bowl and stir to combine.
Blend the dry ingredients into the egg mixture until they are just incorporated.
Mix in the coconut oil, followed by dried cranberries and chopped walnuts.
Using an ice cream scoop, fill up muffin pans layered with paper case until almost full. 

Bake 170C fan, for about 20 minutes.

Bukit Timah Market

Our time to revisit dental clinic was due, we got an afternoon appointment. The three of us.  When we arrived, there was an emergency that required the dentist to attend to the case first before seeing us. One of us needed to have the filling fixed as well. So time kept on stretching. After all the of us were done, it was way past lunch time, it was nearly 4 PM.

Bukit Timah market was in the neighborhood of the clinic, but still had to drive and parked our car. But coming so late in the afternoon has its perks. Parking car was a breeze and getting a table is a piece of cake. I guess, someone was hungry. We ended up having so many dishes, one of them did not make it to this post because its appearance was not appealing.

Found: New Carrot Cake Recipe



My kids actually like carrot cake, especially the one with frosting. My in-laws too. I don't mind baking them so much, but I have had many accidents with grating the carrots that has somewhat discouraged me from making many carrot cakes, 'til I was stuck with too many carrots in the fridge the other day.

I wanted a different type of carrot cake and I found this one, the one that uses buttermilk and coconut flakes. I omitted the walnut/peanut since nobody likes them and it turned out to be an accident-free carrot cake making. I think I like this recipe, I love the coconut in it, it enhances the flavor. It's nice even without frosting!!!

Seven Hours To Go



So, we (I!!!!) have been packing, packing, packing and cleaning and cleaning and washing, more washing and more cleaning up and continue working on whatever needs to be done. My head is spinning mad!!!! I did manage to bake some little carrot cakes yesterday and two loaves of cheese breads for my in-laws, this morning. wink It's such an easy cake to make, but I dislike shredding the carrots as I get cuts most of the time from doing it too fast.

Lots of multi-tasking was done, I was baking, surfing the net, read through my emails, scanning pictures, preparing birthday card for Miss K and I can't remember what else I did and suddenly, bam! It's late afternoon. Just gazillions things to accomplish before we leave.

Our flight is ten minutes to midnight, it's driving me crazy to wait so long for the time to arrive and certainly a challenge to stay awake until the boarding time. Yawn.......... Packing never gets done until you are force to leave!
