We were left with almost-full 2-cup container of cottage cheese while its expiring date was approaching. How I hate throwing away food. If I could help it, I would save it anyway I possibly could. That left me with looking for a new recipe to utilize it. I could use it for lasagna, but almost everyone here is staying away from beef this month. Besides, I wanted to do something different with it, something that I had not done before.
Then I found this recipe and with resources that I had, I made some adjustments . This cottage cheese bread was made. I'd like to mix it with some flax seed, unfortunately, I did not have any. So this time, it's mostly cottage cheese. It's good.
